Cheese(less) Crackers

Dry:

Wet:

  • 1 egg
  • 1 TBS butter (use coconut oil for dairy free)
  • 2 TBS lemon juice

Preheat oven to 350. Combine dry ingredients together in a bowl.  In a separate bowl, whisk together wet ingredients then pour into the dry mix.  Stir until dough forms then roll out between two sheets of parchment paper until about 1/8 in. thick.  (Mine were a bit thicker) cut into squares and top by sprinkling some additional sea salt across the surface.  Bake 12-15 min, removing outer edges as they get done.

Coconut Breaded Shrimp

(what I used in parenthesis)

 

Set oven to 350 degrees.  Clean and pat dry shrimp.  Get three shallow bowls for your prepping stations.  In bowl 1 add your flour and seasonings, bowl 2 is your eggs, bowl 3 is your coconut flakes and bread crumbs.  Coat shrimp in bowl 1 then bowl 2 then bowl 3.  Place on cookie sheet that has been sprayed with cooking spray.  Cook for 10-12 min, turn and cook and additional 7-10 min or until golden brown.  Serve however you like shrimp, I prefer to dip them in my homemade bbq sauce lol

Dinner Rolls – milled wheat

  • 1  1/3  cup  Warm Water
  • 1/3  cup   Extra Virgin Olive Oil (I use this)
  • 1/3 cup   Honey (I use raw, I try to get local)
  • 2 tsp   Sea Salt
  • 1   Egg (free range)
  • 4  1/2  cup   Milled Wheat Flour (I milled 2 cups hard red 1 cup hard white)
  • 1 TBS  Dry Active Yeast

Combine ingredients in order into your bread machine.  Choose dough setting.  Once timer beeps remove and knead about 5-7 times then pull off balls of dough about the size of 1/2 your fist and shape.  Place rolls on cookie sheet and allow to rise for about 30 min then bake at 350 degrees for about 20 min or until golden brown.  I used these to serve sloppy joes on 🙂

Sausage and Egg Puff

Sausage and Egg Puffs

  • 6  eggs, beaten
  • 1lb. sausage browned and drained (I used chicken, free-range)
  • 1 c biscuit baking mix (I use my quick mix)
  • 1 c Shredded Raw cheddar cheese
  • 1 3/4 – 2 c Milk (I used almond)
  • 1 t dry mustard
  • 1/2 t dried oregano

Mix all ingredients. Cover and refrigerate.

Heat oven to 350º.  Pour mixture into greased 2 quart casserole dish.  Bake until knife inserted in center comes out clean approx. 1 hour.

I served with salsa over top.
