Ranch Dressing

Ranch Dressing

Here recently I have been doing a ketogenic diet.  This is an extremely high fat low carb diet that has to be done with clean real food and healthy fats.  This ranch works perfect for that. I actually call it my keto ranch.

Ranch Dressing

Whisk together all ingredients. Store in refrigerator.

I use 2 Tablespoons at a time usually, but I eat fairly large salads.  Pictured above is 3 cups spinach, 2 oz nitrate, nitrite free ham, 1/2 oz shredded carrot, 1 oz raw cheddar, and the ranch.  Pictured below is 3 cups spinach, 2 oz shredded chicken, 3 slices of nitrite, nitrate free bacon, 1/2 oz shredded organic carrot, 1 oz raw cheddar, 1/5 tomato, and the ranch.  Other salad favorites to add are boiled eggs, avocado, black olives, mixed greens.

Pulled Buffalo

First combine salt, pepper, garlic powder, chili powder, parsley and turmeric in a bowl.  Cover roast in this dry rub (you can sit back in fridge for 20 min or continue to next step)  Pour chicken broth into crock pot and place the roast in. Cook in crock pot on low for 5-6 hours or until meat is done and easily pulled apart.  Once meat is done, remove roast and pour the roast juices into a bowl and sit aside.  Shred meat and put back into the crock pot.  Add a 1/4 – 1/2 cup of the reserved juices and the BBQ sauce. Cook in crock pot on low for an additional 1/2 – 1 hour.  We served these on dinner rolls.

I bought my buffalo at a local farm here in AZ called Adam’s Natural Meats.  All my seasonings were organic, my chicken broth was grass fed organic and the BBQ Sauce is my all natural homemade bbq sauce.  You can try this recipe with a pork or beef roast, cooking times may vary.

Homemade Chicken Noodle Soup (GF)

     Homemade Chicken Noodle Soup

  • 16 oz bag noodles, cooked and drained (I used Gluten Free Spirals)
  • 32 oz Free Range Chicken Broth
  • 1/2 lb chicken meat, cooked and shredded
  • 1 cup thickly shredded carrots
  • 4 celery stalks, chopped
  • 4 c broth from cooking your chicken
  • 2 T Italian seasoning
  • 2 t minced onion
  • 1 t chives
  • 1/2 t garlic powder
  • 1/4 t Turmeric
  • sea salt & pepper to taste, we use LOTS of pepper 🙂

Combine all ingredients (excluding chicken and noodles) in crock pot and turn on high while you cook your chicken.  While chicken is cooling, prepare your noodles.  Add chicken, broth and noodles to crock pot and cook on high for approx. 2 hours or until flavors are well incorporated and veggies are tender.

Tex-Mex Chicken

ooo-la-la!!!! Crockpot, oh how I love thee!  This recipe is a winner, winner, chicken dinner!!!  I put the if you use your own or fresh measurements or if you buy organic in a can measurements, I like to do fresh when I can, but let’s be real; it ain’t always happenin’!

     Tex-Mex Chicken

  • 4lg or 5sm Chicken Breasts
  • 8 T Taco Seasoning, divided in half (or 2 packets if you don’t want to make your own)
  • 1/2 c green chilis (8 oz can)
  • 2 c diced tomatoes with juices (15 oz can, not drained)
  • 2 c corn (15 oz can, drained)
  • 2 c cooked black beans, drained (15 oz can, rinsed and drained)
  • 2 c cooked pinto beans, drained (15 oz can, rinsed and drained)
  • 2 c cooked kidney beans, drained (15 oz can, rinsed and drained)
  • Whole Wheat Tortillas (or tortillas of your choice)

Place chicken along the bottom of your crock pot, sprinkle 4 T of the Taco Seasoning over the chicken, continue layering with rest of the ingredients in the order listed, ending with sprinkling the second 4 T of Taco Seasoning over the top.  Cover and let cook on low for 8-10 hours or high for 4-5 hours.  Stir, shredding chicken as you do, serve with tortillas (we use whole wheat ones with this, yum).  Add guacamole, sour cream etc for extra yum!

Pulled Pork

Pulled Pork w/ Homemade BBQ Sauce

  • Pork Shoulder or Large Roast (whichever your prefer)
  • My Homemade BBQ Sauce x3
  • Seasonings to your taste preference: Onion powder, Garlic powder, Chili powder, Black Pepper, Salt, Turmeric, Cumin
  • 1 1/2 c water

 

Cook your pork in a crock pot with the seasonings.  Add water and cook on high for 2 hours and low for 3, or until pork is tender and falls apart easy.  Remove pork and sit aside, dump out the juices from cooking the pork.  Pull the pork apart and return to crock pot.  Add Homemade BBQ Recipe x3.  Stir and cook on low in crock pot for 30 min.

Beef BBQ

Okay, I’ll admit it, I am a bbq junky! I love bbq anything! I have recently taken to making up my own bbq sauces when I’m cooking because we don’t care for the store bought organic varieties much.  Hope you enjoy this one, I know I did.

Beef BBQ

  • 2 lbs stewing beef (I use grass fed pastured beef)
  • 3-4 c chicken broth (I use organic free-range)
  • seasonings for cooking beef: garlic powder, onion powder, black pepper, cumin, turmeric, dry mustard, chili powder
  • seasonings for bbq sauce: garlic powder, onion powder, black pepper, turmeric, chili powder
  • ketchup
  • honey
  • liquid smoke

Slow cook beef in chicken broth and seasonings for cooking beef on low for 4-6 hours or until fully cooked but tender and juicy.  Drain meat and pull apart into shreds.  For the sauce, I mixed ketchup honey and seasonings for bbq sauce with a few drops of liquid  smoke, I am sorry I don’t have more accurate measurements, I have a bad habit of dash it, mix it, taste kind of cooking.

Chili-Basic Recipe

Chili is something I make ALL the time, and I can guarantee you, I have not made it the same 2 times in a row.  The basics are the same but chili is so easy to add your own personal variations to, that you can have lots of fun with making it your own. Oh yeah, and remember, I use organic ingredients and my beef is grass fed.

Jen’s Chili

  • 32 oz tomato juice
  • 30-60 oz chili beans (2-4 cans)
  • 2 lbs ground beef  (I will reduce to 1lb when the budget is a lil tight){grass-fed}
  • 1 onion diced
  • 1 green pepper diced
  • 1/2-1 t   dry mustard
  • 1/2-1 t   turmeric
  • 1-2    t   cumin
  • 2-4    t   chili powder
  • 1-2    t   garlic powder
  • 1/2-1 t   black pepper

Fry up your beef with the peppers, onions and half of the garlic powder.  Combine this and remaining ingredients in crockpot and cook for 4 hours on high or in a pot on stove and simmer on low for 2 hours.
